Quinoa – who knew?

It took me a while to even pronounce this superfood correctly. So that you don’t embarrass yourself repeatedly like I did, it’s KEEN-WAAAAH. You’re welcome in advance. This stuff is similar to couscous, but a bit fluffier. It’s actually an edible seed in the plant family that is closely related to beets and spinach. Crazy, right? This is a super healthy option and is a complete protein that also is a good source of iron and essential amino acids. Long story short – this stuff is legit and you should eat it. It’s tasty, but to take it up a notch and try it in a more savory fashion test out this recipe from TK. The shrimp alone in this are great, simple and usable for any meal; but adding the small amount cheese and milk to the quinoa makes all the difference. Just to note, I used sauteed spinach instead of chard and it was delish! Feel free to get creative with this one since it’s such a cinch. Luckily, I was able to get a quick picture before devouring it. Definitely a new favorite!
